Beefy Mac and Cheese

Ingredients

1/2 box elbow macaroni

2 and 1/2 cups cheddar cheese

1 packaged ground beef

2 tablespoon cream cheese

1 cup spaghetti sauce (Ragu)

2tablespoon oil

3 tablespoon sugar

1 onion

2 peg garlic

1 stick thyme

1 cup tomato chunks

a dash of black pepper and salt

1/4 teaspoon ginger powder

1/4 teaspoon cayenne pepper

1egg

Steps

Meat:

1. Wash the thyme, garlic, onion and tomato

2.Cut thyme, onion and tomato into minces or as you desire. Put all in one container and let sit aside.

3. Thaw ground turkey or ground beef

4. Place skillet/pot on stove top, set heat as desired

5. Add 2 tablespoon oil to skillet/pot to heat

6. Add the meat to heated pan

7. Stir and crush meat in pan(press meat into tiny chunks while stirring)

8. Add the already minced tomato, garlic, onion and thyme to meat

9. Sprinkle salt and pepper, ginger powder, cayenne pepper over meat in pot

10. Add the 3 teaspoon of sugar, stir all together

let cook for 20mins.


Macaroni:

Boil elbow macaroni till textures softens (cooked)

Pour off Water

Let macaroni sit and drain for 3minutes

Pour from drainer to bowl

Crack and beat egg, let sit aside

Pour 1 and a 1/2 cup of cheese over macaroni

Add hot meat to bowl with the cheese and macaroni

Stir together as cheese begins to melt

Add already beaten egg to mixture..


Preparation:

heat oven to 375degree

pour 1/2 cup cheese in baking pan

pour mixture made into baking pan

sprinkle 1/2 cup cheese on top of mixture in pan

Let bake for 20-25minutes.

Let sit 5mins to cool

ENJOY!!


Escoveitch Sauce


½ lime (Juice of)

1 teaspoon salt

½ teaspoon black pepper

1 red bell pepper (thinly sliced),but feel free to do size of your choice

1 green bell pepper (thinly sliced)but feel free to do size of your choice

2 carrots (cut into thin strips)

1 onion (thinly sliced)

1 clove garlic (sliced)

½ teaspoon Jamaican Pimento

1 cup white vinegar

1/4 cup of water

10 sprigs thyme

3 scotch bonnet pepper (please use peppers as you desire/as little as you want)

add 1 tablespoon extra virgin olive Oil (optional)

1/4 tea spoon sugar

Steps:

1. Put pot on stove, turn heat to medium temperature.

2. Add the bell peppers, onions, carrot and garlic to one bowl, then pour the olive oil over the veggies in bowl.

3. Use your hand to toss everything around together. When pot is heated pour mixture in pot then add vinegar, water, thyme, hot peppers and pimento to mixture in pot while it is still being heated up.

4. Sprinkle sugar, salt and pepper over veggies in pot while simmering together.

5. Let simmer for 10-15mins,let cool, then pour in a jar with cover to marinate and cool some more.

use as desired, ENJOY!!


Escoveitch Fish served with Bammy

Fish

Steps:

1.Get the fish scaled. rinse thoroughly inside out repeatedly using running water and lime or lime juice.

2. Put aside to drain.

3. Get a small bowl and add salt and pepper, mix both together .

4. Cut fish into slices or if whole, slit a 3inch line on both sides of belly, add a finger tip of the salt and pepper mixture to each slit and in the belly.

5. Pour Oil into pot, turn stove to desired heat and place pot on top. or deep fryer. Let oil heat up to very hot, add a whole green pepper to oil and a peg of garlic.

6. Add fish. Let deep Fry till crispy golden brown. Use any fish of choice. I use snapper, goat fish or parrot fish)


Ingredients:

half lime/lemon juice

half teaspoon black pepper

quarter teaspoon salt

3lb fish (4-5fish)


Bammy

Steps:

1. Get a condensed milk, pour out into a bowl.

2. Add coconut milk and water then stir together until milk is fully dissolved. Let sit aside.

3. Get two whole bammy if its a regular, cut it into 4quarters,however if it is a mini like the ones I have above, go ahead and make them whole.

4. Place the Bammy/quarters into the milk mixture, let soak for 20mins minimum. Put deep fryer on or pot on stove top, turn to heat desired.

5. Add oil to fryer or pot, let it get hot, then add bammy/bammy pieces. Allow to fry on each side 5mins or until crispy golden brown.

Ingredients:

6 tablespoon condensed milk (add more if you desire extra sweetness)

1/2 can coconut milk (I use Grace Kennedy brand)

1/3 cup of water.


Jamaican Fish Tea

The fish must be fresh. Choose larger fish that have some fat. I use porgy, turbot. grunt and Snapper are good examples-- make sure the fish is properly scaled and cleaned.



2lbs fish

2 limes (or lemons)

3 qtrs. (water)

2 garlic (large or medium cloves)

1 sprig thyme

3 stalks escellion

2 medium potatoes

4 finger of green bananas

1 green scotch bonnet pepper to taste

salt and black pepper

few pimento seeds

celery sticks(optional)

Steps

1. Washed fish

2. Cut in two inch pieces across the skeleton.

3. Bring fish and seasonings to a rapid boil in 14 cups of water, then add the lemon juice. 4. 4. Add the chocho, turnip and cassava.

5. Reduce heat and cook for 1.5 hours.

Most of us Jamaicans sometimes add a variety of "hard food" such as coco, dasheen, "green" breadfruit, white potatoes, Jamaican yams (not sweet potatoes), green bananas, and dumplings to fish soup. You can substitute any of these for the cassava.
